Sweet Potato Tacos!

As you may remember, I adopted this recipe from the very lovely Jenny, author behind Texitarian Kitchen -- and I wrote this as a Guest Post on my girl Mae Badiyan's blog.

In addition to sharing fun and must try recipes here on my blog, I'm documenting it for reference so I wanted to publish this here as well:)

If you remember from my foreword, I intentionally boiled the black beans to almost mush and made it part of the taco filling. I also boiled the sweet potato, creating a mashed/puree consistency, which really complimented the black beans and other fillers in this taco. I about killed my veggies in the oven, so if you have a hot oven, cut back from 375 to 350 for sure - I may have forgot to mention that in the Guest Post.


Sweet Potato Tacos (vegan, gluten free, soy free)

Yields 10 - 12 tacos (or more, we had lots of left overs!)

1 - 2 sweet potatoes
1 cup black beans
1 large red bell pepper (sliced)
1 medium red onion (sliced)
2 garlic cloves (minced)
1 teaspoon chili powder
1 teaspoon turmeric
1 teaspoon pepper
1 teaspoon Himalayan salt
pinch of cayenne
1 avocado
1/2 lemon (juice + zest)
2 tablespoons oil of choice (I used extra virgin olive oil)
1 healthy handful cilantro

1) Boil the sweet potato until soft. Remove skin and cut into cubes OR mash/puree.

2) Soak and boil the black beans until soft.

3) Preheat oven to 375° F and line a large baking sheet with parchment paper. In a large bowl, whisk the dry ingredients then add the wet ingredients to the dry ones. Throw in all your veggies and toss everything together until all is evenly coated. Cook for about 25 minutes. When there is about 10 minutes left, add in your tortillas to soften.

4) Serve immediately - Garnish with cilantro and a couple slices of avocado.

I make sure to always have a bag or two of Daiya [day-ah] on hand, and if you're wondering where the sour cream is, try adding some SoDelicious plain yogurt!

Guest Posting | Sweet Potato Tacos

Today I was invited to Guest Post at the very lovely and talented Mae Badiyan's blog! Mae has several ventures going on and I encourage you to check her blog out! She has been vegetarian for about six months now and requested I share one of my recipes with her and her readers. In all the excitement, I thought I would share one of my favorite dishes: Sweet Potato Tacos!

Creamy Chia Kale Chips

I am so excited to share this recipe -- it came out perfectly, and I can't hardly wait to make more!

Two things I must always have in my house is kale and chia seeds! Two superfoods with amazing health benefits, why not combine and create superpowers?



Creamy Chia Kale Chips (raw, vegan, gluten free, soy free)

I used SEVERAL leaves (at least 2-3 bunches of kale)

1 cup chia seeds
1/4 cup nutritional yeast
1/2 teaspoon turmeric
1/2 teaspoon pepper
1/2 teaspoon Himalayan salt
1 tablespoon rosemary
pinch of cayenne
1/2 lemon (juice + zest)
2 tablespoons oil of choice (I used extra virgin olive oil)
1/4 cup of water (use as needed)

1) After thoroughly washing the kale, I soak the leaves in a bowl for a few hours before spinning them dry and tearing them into bite sizes.

2) In a large bowl, whisk the dry ingredients then add the wet ingredients to the dry ones (I used all the water, and might add more in future batches if I'm making a lot).

3) Add the kale in the bowl and toss until every leaf is coated with the creamy chia sauce.

4) Spread leaves out on the trays and set your dehydrator at 115 degrees for 4-6 hours

So yummy! I truly hope you make these and tell me what you think!

Protein Pancakes


Mmmmm, breakfast! It's the most important meal of the day, right? I used to whip up 6 egg whites with sriracha, some cheese if I felt like it, and often times a handful of spinach.

Since becoming raw, vegan, gluten-free, soy-free, and sugar-free, I've pegged breakfast the most difficult meal, but I'm getting creative and having fun in the process.  

Enter: Protein Pancakes... Do you remember me talking about these bad boys:

Was I the only one who didn't know?!
They were so amazing, even my Dad was stoked--and he's never really been a pancake kind of guy. In fact, for over 20 years I would say he started his day with a greasy ham and cheese omelette. Not anymore! 

Protein Pancakes (vegan, gluten free, soy free)

Yields about 8-10 pancakes or more depending on size

1 1/2 cup Bob's GF pancake mix
1/2 cup milk (I used coconut milk)
1-2 scoops protein
1 banana
1 tablespoon chia seeds
1 tablespoon maca
1 tablespoon cacao nibs
1 tablespoon goji berries (I soaked them in water for a bit)
1 teaspoon cinnamon

1) Blend the banana and milk together

2) Place pancake mix, protein, and other dry ingredients in a large mixing bowl.

3) Whisk together then add the wet ingredients to the dry ones.

4) Oil a pan with coconut oil and get your pancake groove on!

5) Toppings included chopped walnuts, shredded coconut, and more cacao!

I whipped up an afterthought sauce that has endless possibilities... only, I can't remember which one I used for this recipe, so here's a couple variations to try out:)

1 cup berries
6oz SoDelicious greek yogurt (when I made it, I used chocolate!)
Blend

~*~

1 cup Sambazon Açai Juice
6oz Amande yogurt (when I made it another time, I used coconut!)
Blend

Super Green Drink


When I lived in California I had an amazing workout routine. I started everyday with Pilates at 6AM, Yoga at 7AM, and a lift sesh with my Brother at 8AM. We usually wouldn't lift for more than 45 minutes, so I'd end our routine with a burnout of some sort, whether it be curls, abs, or running for the remaining 15 minutes.

After work, usually around 6PM I had a date with the treadmill for about 30-45 minutes and closed out my day with a beautifully anticipated steam room session before heading home for dinner. Life was good.

Because of this workout routine, I adopted this Super Green Drink. It's perfect post workout, or you can do what I did, and sip a quarter at a time--which you should be doing anyway if you're work out is over an hour.


Super Green Drink or Green Monster (raw, vegan, gluten and soy free)

20oz Water or Green Tea
1 Handful of broccoli (stems & all)
1-2 Scoops of protein
1 Scoop Glucose-amine
1 Scoop Flaxseed (golden, grounded)
1 Scoop "Nature Source" Green Enzymes
1 Scoop Super Greens
1/4 Cup GF Oatmeal*

*Post workout I would drink this and eat 1/4 cup of oatmeal for the much needed carbs; however, when I was running late or knew I would be short on time I would put the gluten-free oats in the drink. It thickens it up, and tastes phenomenal with the green tea!

Depending on what is in your fridge, consider adding the following:

Kale
Chard
Spinach
Red or Green Cabbage
Cilantro
1/2 Beet

Obviously Green Drink combinations are endless, and while my favorite recipe is timeless, even now I find myself adding things like Aloe Vera Gel, Apple Cider Vinegar, Turmeric, and Milk Thistle to make them even better.

Spicy Chickpea Cutlets + Poppers

I am seriously having way too much fun in the kitchen -- I can't seem to write my recipes down fast enough as I play with available ingredients and embrace my whimsical style.

I hope you enjoy what I consider the beginning of Jenn's Kitchen :)

Here's the suuuuper easy recipe for my Spicy Chickpea Cutlets & Poppers


Yields 10 Chickpea Cutlets + 12 Mini Poppers
(Vegan, Soy-free, Gluten-free) 

2 cups cooked chickpeas
2 tablespoons olive oil
1/2 cup brown rice flour
1/2 cup filtered water
2 garlic cloves (minced)
1/2 teaspoon lemon zest
1/2 teaspoon dried tyme
1/2 teaspoon sage
1/2 teaspoon turmeric
1/2 teaspoon ground pepper
pinch of cayenne pepper

1) Mix ingredients together in a bowl.

2) For the cutlets simply oil a pan with a little coconut oil on medium heat then scoop the chickpea mixture a tablespoon at a time into the pan and cook like a pancake.


3) For the poppers, simply spray your mini muffin pan, pour the mixture and throw in the oven on 350 for 25 minutes!


4) Enjoy!

Super easy and oh so tasty!

I'm playing around with different herbs, but the above is what I used in these pictures. I'm definitely going to need to purchase chickpeas in bulk! I always want to have hummus, these, and falafel's available:)

Also, some foodies might want a sauce to go to with this recipe. I'm thinking about a Cilantro Avocado Aioli... What do you think?

These recipes are by no means perfected, but I still want to share them even if they are constantly evolving! Plus... I need to write them down before I forget!!


The pictured Green Drink isn't my Super Green Drink recipe -- also known as my Green Monster, which I haven't shared yet, but it was pretty darn good!

I basically just used everything we had in our fridge at the time:

4 large collard green leaves (stems and all)
2 handfuls of kale
1 handful cilantro
4-6 carrots
1 handful of prunes
1 pinkie-sized piece of ginger
2 tbsp aloe vera gel
3 tbsp flax
2 scoops Vega One
* blend with whatever you want -- I used organic rice milk & kangen water

Clearly, I am officially addicted to this food party! I especially look forward to sharing even more of what's on my plate, in my kitchen, in my garden--what I'm buying and so on--in future posts once I'm settled from the recent move.

Every morning it is all about a green drink! I have an actual "Green Drink" recipe that I'll share in another post -- but lately I have just been sticking with the juice elixers!

[side note: a fabulous 10-day breakfast juice jump-starter is fresh watermelon juice with brewer's yeast. amazing liver cleanse, let alone your entire body]

 
In my fridge I found an apple, lemon, celery, collard greens, tomato, and ginger -- so I threw in a cup of almond milk and blended everything together in the VitaMix. It tasted so good! It made about 4.5 cups, so a little goes a long way!

Raw Pizza + Kale Salad with Zucchini Noodles 
My Mom and I were running errands in town and decided to take a break and refuel at Choice Health Bar. I've been several times, but this was my Mom's first time so I was excited to dive in to some good grinds. We both ordered off the Daily Special's Menu -- Kale Salad with zucchini noodles and a raw pizza. I can't seem to get the pizza out of my mind. Every bite tasted straight up like pizza!!!! I kept taking note of flavors and all I could think about was how I plan on recreating this with my Excalibur! I say this every time raw pizza is brought up, by the way;)  The Kale salad was phenomenal -- it was a flavor change our palates desperately needed. One of the great things about eating out, especially at raw/vegan places is the inspiration you get.

The raw/vegan lifestyle is completely new to my family--my brother and I flirted with the lifestyle years ago; however, our immediate change and strict principle for eating this way is not without a struggle for each of us. My Dad has always been a "meat and potatoes" kind of guy and is craving "substance" and "hot" food and thinks he's malnutrition eating rabbit food, so the challenge to create amazing meals aside from just salads is heavy on my shoulders.

Now that I am in Seattle, it is clearly going to be an everyday debate on what he should/shouldn't eat. He boast to friends how he's completely changed his way of eating, (which he has--we all have!) yet complains to me and makes my blood boil over with his defiant blabber about eating this or eating that. I am all about venting and letting out frustration; however, I feel he is on automatic defense mode and attacks me or provokes me. There are key things he (we) should not be eating: dairy, animal products, soy, and gluten for example. Period!

My ultimate goal is to give him what he wants in an alternative way, so if you are a raw food guru, please share any tips/advice or even your favorite websites/blogs to help me out! I found several I frequent, but the more the merrier, for sure.

Ahhh, can't hardly wait to be settled in new rental where I can unpack and start setting up my kitchen, and purchase superfoods in bulk. I plan on making tons of food non-stop so there is a plethora of options for "grab 'n go" meals and more importantly portion controlled meals. It's only day five here in the Emerald City, but day two I realized I need to prepare my Dad's meals! This is actually not a chore for me because I love being in the kitchen and when I used to cater meals, I would prep plates anyway. Win/Win!

Eating Machine


Have I mentioned how much I love taking pictures of food...or is it that obvious? In my younger years I kick started a career in Catering & Convention Services and began taking pictures of how certain dishes were plated. Mostly getting ideas for future events, and other times just marveling at the beauty before diving in and destroying it. Unfortunately the only camera I currently have is my iPhone (which isn't horrible!) but I'm hoping in the near future I can get a nice(r) camera and get even more into my photography!

Anyhoo, here are some recent eats from Jenn's Kitchen:)

Mmmm, everything was soooo yummy, I absolutely love eating like this. The best part is discovering all new menu options and the amazing companies out there I never knew existed!

Lärabars are a phenomenal "go to" raw food when you're famished and lacking time or just need a few bites to get you by. I typically eat half a bar, which lasts me awhile, until my next munch-sesh.

The dairy-free and soy-free yogurts are huge finds for me since I absolutely love yogurt for breakfast. Amande is (a Seattle based company!) cultured almond milk, and So Delicious is (a Eugene based company!) cultured coconut milk --- and I absolutely recommend both! Amande is a little chunkier, whereas So Delicious is definitely creamier and looks (and feels) more like yogurt. However both boast phenomenal yogurt alternatives AND satisfy the belly for a substantial amount of time.

And seriously? Raw pizza has moved to the TOP of my list for "first things I plan on making" with my new Excalibur Dehydrator. The first pictured raw pizza is from Choice Health bar here in Lahaina and it straight up tasted like pizza! The tomato base and vegan cheese -- it was to die for! The second pictured raw pizza is from WholeFoods and for +/- $7.99 it was worth every bite. Absurd to pay that much, yes--but it was pure inspiration. Pure motivation. The major selling point was the crust -- it was so thick and made the entire pizza a hearty meal. I actually split this one slice three ways and coupled it with fresh salads.

Excalibur Bliss


My Let's Talk About Food post the other day sparked a phenomenal question from Nada, author of One Arab Vegan. In my Fist Pumps post I shared about my recent purchase of the 9-Tray Large-Excalibur with 26 hour Timer #3926T and Nada was curious why I decided on the 9-tray opposed to the 5-tray.

I'm a single gal so the 9-tray may be excessive, however I plan on making A LOT of yum. Think when you go into a raw/vegan health bar and you look around and you see an epic operational kitchen with everything you would ever need, shelves lined up with glass jars filled with seeds, nuts, powders, spices, and herbs... that's my goal. And I'm starting with the Excalibur. When I get to Seattle my next purchase is a VitaMix (I've been using my brother's here on Maui).


While I don't plan on opening my own raw/vegan health bar (heck, who knows, maybe I will!), I do plan on creating A LOT of awesome recipes to feed my family. I am 99.9% certain I will ALWAYS have something in the dehydrator, if not multiple trays in use at the same time.

My family (including myself!) used to be straight up carnivores and now we're 100% herbivores. Not only do I need the tools to successfully transition and maintain this new and strict lifestyle (raw/vegan, dairy-free, soy-free, egg-free, gluten-free), I need recipes, inspiration, and mind-blowing meals for my family to embrace this lifestyle even more, and fall in love with this way of life because it's the way we need to be eating and living. 

Right now we've been what I consider getting by. For over six weeks now we've been living off mainly salads and other raw means to obtain a balanced nutritional intake but with out what my Dad likes to call: substance. He is a big guy, and we want to keep him a big guy. One of my biggest fears in this transition is my parents losing weight, because they really do not need to lose any more. Once we relieve ourselves from this current state of limbo, I'm hoping to get back into the kitchen where I've always been, and start (un)cooking with my lovely new impulse purchase

I have a strong inclination this will be a long and possibly tiring process of trial and error; however I also think that will be part of the fun and a learning curve I'm prepared for (for the most part!). Plus, don't you think that is a great new adventure to share with all of you -- my wonderful readers?!

Let's talk about FOOD!

I don't think I have ever been so excited for a link-up before! Last week commenced my very first "What I Ate Wednesday" link-up post: "What's On Your Plate?" and then a personal fave: "Fist Pumps" and I can confidently report I am hooked. Perhaps I'm biased because Jenn spells her name with two n's like I do, or it could be because we're both passionate about healthy food..and want to share our finds and creations with everyone!

I have been receiving A LOT of awesome things in the mail as of late, and here is something I am especially excited about:

Since I've discovered dairy-free/soy-free "yogurts" I've been ecstatic about breakfast -- here's this week's selection:

1/2 Bowl of Plain So Delicious topped with Chia Seeds & Goji Berries!
The other 1/2 of Plain So Delicious topped with Chia Seeds, Goji Berries & Chopped Almonds!
The chocolate So Delicious by the way? SO DELICIOUS! I enjoyed it as is, no need for frills. Just a few spoonfuls hit the spot as an after dinner "treat." I haven't indulged in awhile and was pretty satisfied over the weekend making it last:)

We were SO hungry, our salads tasted phenomenal! I covered mine in turmeric and freshly ground pepper then drizzled some Bragg's Apple Cider Vinegar and just a touch of Extra Virgin Olive Oil. Delish.

Fist Pumps

First things first: Who watched the Victoria's Secret Fashion Show last night?


While it was mostly inspiration and motivation to keep on eating healthy and taking care of my body, there were segments I wanted to offer a few of the women some burgers...


...just kidding -- that's disgusting.

However, it is extremely impressive some of those ladies have popped out children because they look fan-freakin'-tastic.

Lunch @ Mala
I "cheated" the other day when I couldn't resist the Gado Gado Salad at Mala Ocean Tavern. It's a tasty vegan salad with coconut peanut dressing. I only ate a couple tofu squares and left the rest for the waiter. If you're wondering what exactly the "cheat" was -- I'm soy-free!

Mmmm, Vita Coco will seriously always be in my fridge! Same with Kombucha -- does anyone make their own? I want to attempt it...

Here's a sweet find:

Food For Life
I put a slice in the toaster for about 15-seconds to warm it up a bit and it tastes really good just by itself! This morning I decided to spread Almond Butter on it with apple slices and cinnamon-- so delish.

My Almond-Date spread is new favorite...


I throw a tortilla right on my stove top (on low) to warm it up. Then I spread some date paste (handful of dates blended with spring water until desired consistency) on one side, and sprinkle a small handful of almonds. Fold the tortilla, flip it so both sides are warm, then cut into slices. It's flippin' good!

And a fab dinner I can't stop thinking about...

Rice garlic noodles w/pohole salad + spinach/kale & toppings
I'm obsessed with Star Noodle's Garlic Noodles, and ordered it gluten-free (rice noodles) and added their amazing pohole salad to mine - I'm drooling just thinking about it.
